Over all the other senses, smell evokes the most nostalgic feelings and memories that you may have forgotten over time. I believe that the author chose to incorporate smell not just for the feelings, but that it is also one of the most complex senses alongside taste. This perfectly matches the complexity of the main character, Jean-Baptiste Grenouille.
